The new document is written without an information dictionary, so there are no empty fields left behind carrying a trace of what was there.
The cleaned file is parsed again by the same reader used by the metadata viewer, and the result of that parse is displayed.
The tool states plainly what it does not remove: text within the pages, and XMP packets, which are a separate structure.
Strip the document information from a PDF by rebuilding it. Every page is copied into a new document that carries no information dictionary at all, so there is nothing to overlook — the fields are absent because none were written, not because they were blanked. Afterwards the output is parsed again and what that parse found is shown to you, so the claim is verified rather than asserted. Be aware of the limits: this removes document information, not text inside the pages, and not XMP packets embedded by some producers.
